Beschreibung
Der Weissburgunder "Vom Muschelkalk" besticht durch ein leuchtendes Gelbgrün im Glas. Das Bouquet erinnert an Zitrusfrüchte und Äpfel. Am Gaumen ist der Wein geprägt von einer tiefgründigen, harmonischen, natürlichen Säure und einer lebendigen Mineralität, die von extrem kalkhaltigen Böden herrührt. Der Wein ist elegant mit einem langen Finale. Auch das kann Weissburgunder. Pures Terroir.

Vinifikation
In drei Selektionen werden die bestgereiften Trauben per Hand gelesen. Dem schonenden Pressen folgt eine natürliche Klärung durch Sedimentation. Anschliessend folgt die Gärung, teils spontan dank natürlicher Hefen, in gebrauchten 500 Liter Eichenholzfässer. Nach dem biologischen Säureabbau lagert der Wein neun Monate auf der Vollhefe, danach Lagerung im Stahltank bis zur Füllung.
